  • ½ teaspoon salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • ½ cup sour cream, room temperature
  • ¼ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 2 large eggs, room temperature
  • 4 teaspoons red food coloring
  • ⅔ cup buttermilk, room temperature
  • 1 teaspoon baking soda
  • 1 teaspoon white vinegar

Oreo Cheesecake Filling:

  • 10 Oreos (filling removed, crushed)
  • 24 oz full-fat cream cheese, room temperature
  • Oreo filling from the 10 Oreos
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch (or 3 tablespoons all-purpose flour)
  • 1 cup sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 3 large eggs + 1 egg yolk, room temperature
  • 15 Oreos, chopped

Ganache Topping:

  • 1 cup dark chocolate chips
  • ½ cup heavy cream

Decoration:

  • 1 can store-bought cream cheese frosting
  • 8 Oreos, chopped

Directions:

1️⃣ Red Velvet Cake Bottom:

  1. Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan and an 8-inch round cake pan by lining with parchment paper and greasing with non-stick spray.
  2. Mix the dry ingredients: In a medium bowl, whisk together flour, cocoa powder, and salt.
  3. Cream butter and sugar: In a large bowl, beat together the butter and sugar until light and fluffy. Mix in sour cream, vegetable oil, vanilla extract, eggs, and red food coloring until combined.
  4. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, mixing just until incorporated.
  5. Activate the leavening: In a small bowl, combine baking soda and vinegar, then quickly fold into the batter.
  6. Bake: Divide the batter between the two prepared pans and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely.

2️⃣ Oreo Cheesecake Filling:

  1. Crush the Oreos: Process the Oreo wafers into fine crumbs and set aside.
  2. Prepare the cheesecake mixture: In a large bowl, beat cream cheese, the Oreo filling you set aside, sugar, and cornstarch until smooth and creamy.
  3. Incorporate wet ingredients: Mix in the sour cream, vanilla, eggs, and egg yolk until fully combined.
  4. Add Oreos: Gently fold in the Oreo crumbs and chopped Oreos.
  5. Assemble: Place one layer of the red velvet cake in the bottom of the 9-inch springform pan. Pour the Oreo cheesecake mixture on top, spreading it evenly.

3️⃣ Baking:

  1. Prepare a water bath: Wrap the bottom of the springform pan with aluminum foil and place it in a larger pan filled with hot water, about halfway up the sides of the springform pan.
  2. Bake at 300°F for 1 hour and 30 minutes, or until the cheesecake is mostly set but slightly wobbly in the center.
  3. Cool: Turn off the oven, crack the oven door slightly, and let the cheesecake cool slowly. Afterward, refrigerate the cheesecake overnight.

4️⃣ Ganache Topping:

  1. Make the ganache: Microwave the dark chocolate chips and heavy cream in intervals, stirring after each, until smooth.
  2. Top the cheesecake: Pour the ganache over the chilled cheesecake, spreading it evenly.

5️⃣ Decoration:

  1. Decorate the sides: Crumble the second layer of red velvet cake and press it onto the sides of the cheesecake.
  2. Frost and garnish: Use cream cheese frosting to create swirls on top of the cheesecake and sprinkle with chopped Oreos for a final touch.

Tips:

  • Water bath: To avoid cracks in your cheesecake, the water bath provides a gentle, even baking process.
  • Refrigeration: This cheesecake is best served after being chilled overnight, allowing the flavors to meld and the texture to set perfectly.
