Recipe for Cheesy Potato Muffins
Ingredients:
2 cups mashed potatoes (preferably leftover)
1 cup cheddar cheese, shredded
2 large eggs
1/4 cup milk
2 tablespoons butter, melted
2 tablespoons sour cream
1/4 cup green onions, chopped
Salt and pepper, to taste
Cooking spray or butter for greasing
Instructions:
Preheat Oven and Prepare Muffin Pan:
Preheat your oven to 375°F (190°C).
Grease a muffin tin with cooking spray or butter.
Mix Ingredients:
In a large bowl, mix together the mashed potatoes, shredded cheese, eggs, milk, melted butter, and sour cream.
Stir in the chopped green onions and season with salt and pepper.
Fill Muffin Tin:
Spoon the potato mixture into the greased muffin cups. Fill them to the top as they won’t rise much.
Bake:
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.
Cool and Serve:
Let them cool in the pan for about 5 minutes before removing.
Serve warm with additional sour cream or your choice of dipping sauce.
