Hearty Beef and Vegetable Stew Recipe
Ingredients:
1.5 pounds beef stew meat, cut into cubes
2 tablespoons vegetable oil
1 large onion, chopped
2 cloves garlic, minced
4 cups beef broth
1 can (14.5 oz) diced tomatoes
3 carrots, peeled and sliced
3 potatoes, peeled and cubed
1 cup frozen green beans
1 cup frozen corn
1 cup frozen peas
Salt and pepper to taste
1 teaspoon dried thyme
2 bay leaves
Instructions:
Brown the Beef:
Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and cook until browned on all sides. Remove the beef from the pot and set aside.
Sauté Onions and Garlic:
In the same pot, add the onions and cook until they are translucent. Add the garlic and cook for another minute until fragrant.
Deglaze and Simmer:
Return the beef to the pot. Add the beef broth and canned tomatoes, scraping up any browned bits from the bottom of the pot.
Add Vegetables and Season:
Add the carrots, potatoes, thyme, and bay leaves. Bring to a boil, then reduce heat to low and simmer for about 1 hour, or until the meat and vegetables are tender.
Add Remaining Vegetables:
Add the frozen green beans, corn, and peas in the last 15 minutes of cooking to preserve their color and texture.
Season and Serve:
Remove the bay leaves and season the stew with salt and pepper to taste. Serve hot, ideally with a side of crusty bread for dipping.
