Cheesy Bacon Potatoes Recipe – TINSUF

Cheesy Bacon Potatoes Recipe

Ingredients:

1.5 pounds small or baby potatoes, washed and halved

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup sour cream

6 slices bacon, cooked and chopped

1/4 cup green onions or chives, chopped

2 cloves garlic, minced

Salt and pepper to taste

1 tablespoon olive oil

Optional: 1/4 teaspoon smoked paprika for added flavor

Instructions:

Preheat Oven:

Preheat your oven to 400°F (200°C).

Prepare Potatoes:

Toss the halved potatoes with olive oil, minced garlic, salt, and pepper until evenly coated.

Spread the potatoes on a baking sheet in a single layer and roast for about 20-25 minutes, or until they are golden and tender.

Mix Cheeses and Sour Cream:

While the potatoes are roasting, in a bowl, mix together the shredded cheddar cheese, cream cheese, and sour cream. Add smoked paprika if using, for a smoky flavor.

Combine Potatoes and Cheese Mixture:

Once potatoes are roasted, remove them from the oven and reduce the oven temperature to 350°F (175°C).

Place the roasted potatoes in a baking dish, and dollop the cheese mixture over the hot potatoes. Use a spoon to gently mix, allowing the heat from the potatoes to melt the cheese mixture and coat the potatoes evenly.

Add Bacon and Bake:

Sprinkle the chopped bacon and half of the green onions or chives over the top.

Return the dish to the oven and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

Final Garnish:

Garnish with the remaining chopped green onions or chives before serving.

Serve:

Serve hot as a delicious side dish or a comforting main course.

This dish combines creamy, cheesy goodness with the crisp, savory flavor of bacon, all enveloped around tender roasted potatoes.

It’s sure to be a hit whether served at a family dinner or as a hearty side at your next gathering! If you need any modifications to the recipe or have other culinary questions, feel free to ask.
