Caramelized Pineapple Dessert Recipe
Ingredients:
1 large ripe pineapple
1/2 cup brown sugar
1/4 cup butter
1 teaspoon cinnamon (optional)
For custard (if making flan):
3 eggs
1 cup milk
1/3 cup sugar
1 teaspoon vanilla extract
Instructions:
Prepare the Pineapple:
Peel the pineapple and cut it into rings or slices. Remove the core if desired.
Caramelize the Pineapple:
In a large skillet, melt the butter over medium heat. Add the brown sugar and cinnamon if using, stirring until the sugar dissolves and the mixture is bubbling.
Add the pineapple slices to the skillet, and allow them to caramelize for about 3-4 minutes on each side until they are golden brown and coated with the caramel.
If Making Flan:
Preheat your oven to 350°F (175°C).
In a blender, combine eggs, milk, sugar, and vanilla extract. Blend until smooth.
Arrange the caramelized pineapple slices in the bottom of a baking dish.
Pour the custard mixture over the pineapple.
Place the baking dish in a larger baking pan and add hot water to the outer pan (about halfway up the sides of the flan dish).
Bake for 40-45 minutes or until the custard is set.
Serve:
If made as a simple caramelized pineapple, serve warm, possibly with a scoop of vanilla ice cream or a dollop of whipped cream.
If made as pineapple flan, let it cool, then refrigerate for a few hours. Invert onto a plate to serve so that the caramelized pineapple is on top.
