Ingredients:

For the Gravy:

1 pound sausage (pork breakfast sausage is typical)

1/3 cup all-purpose flour

3 to 4 cups milk

Salt and pepper to taste

For the Casserole:

1 can (16 oz) refrigerated biscuits or homemade biscuit dough

1 cup shredded cheddar cheese (optional)

Cooking spray for greasing

Instructions:

Preheat the Oven:

Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish with cooking spray.

Make the Gravy:

In a large skillet over medium heat, cook the sausage until browned and crumbly. Do not drain the fat.

Sprinkle the flour over the sausage and stir until fully absorbed.

Gradually add the milk, stirring constantly until the mixture is smooth. Bring to a boil, then reduce the heat and simmer until the gravy thickens (about 5 minutes). Season with salt and pepper.

Prepare the Biscuits:

If using canned biscuits, cut each biscuit into quarters. If using homemade biscuit dough, roll out and cut into small rounds.

Assemble the Casserole:

Spread half of the cut biscuits in the bottom of the greased baking dish.

Pour the hot sausage gravy over the biscuits in the dish.

Top with the remaining biscuit pieces. If using cheese, sprinkle it over the top of the biscuits.

Bake:

Bake in the preheated oven for about 20-25 minutes or until the biscuits are golden brown and the gravy bubbles around the edges.

Serve:

Let the casserole sit for a few minutes after removing from the oven to set up a bit.

Serve warm for breakfast or brunch, ideally with some eggs or a side of fruit for a complete meal.
