Banana Nut Cake with Cream Cheese Frosting Recipe

Ingredients:

For the Cake:

3 ripe bananas, mashed

2 cups all-purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, at room temperature

1 cup granulated sugar

1/2 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream

1 cup chopped walnuts

For the Cream Cheese Frosting:

1/2 cup butter, softened

8 ounces cream cheese, softened

3-4 cups powdered sugar, sifted

1 teaspoon vanilla extract

Toppings:

Sliced bananas

Whole and chopped pecans

Caramel sauce or honey for drizzling

Instructions:

Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan or two 9-inch round cake pans.

In a medium bowl, mix the flour, baking soda, and salt. Set aside.

In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.

Beat in the eggs, one at a time, then stir in the vanilla extract and mashed bananas.

Add the flour mixture alternately with the sour cream, mixing until just incorporated. Fold in the chopped walnuts.

Pour batter into the prepared pan(s) and smooth the top.

Bake:

Bake for 25-30 minutes for round pans or 35-40 minutes for a 9×13 pan, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool completely on a wire rack.

Make the Cream Cheese Frosting:

In a large bowl, beat together the softened butter and cream cheese until smooth and creamy.

Gradually add the powdered sugar, beating until the frosting is smooth and spreadable. Mix in the vanilla extract.

Assemble the Cake:

If baked in round pans, place one cake layer on your serving plate, spread frosting over the top, then add the second layer and frost the top and sides of the cake.

If baked in a 9×13 pan, simply spread the frosting evenly over the top of the cooled cake.

Add Toppings:

Just before serving, top with fresh banana slices and pecans. Drizzle with caramel sauce or honey for added sweetness and flair.

Serve:

Cut into slices and serve. This cake is best enjoyed fresh but can be refrigerated in an airtight container for up to 3 days.
