Ingredients:

1 cup light brown sugar

1 can (14 oz) sweetened condensed milk

2 tablespoons golden syrup or corn syrup

1 1/2 cups dark chocolate chips

1 tablespoon coconut oil

For Garnish:

1/2 cup roasted nuts, chopped (e.g., peanuts, hazelnuts)

Instructions:

Prepare the Shortbread Base:

Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.

In a bowl, mix flour and sugar. Cut in the butter until the mixture resembles coarse crumbs.

Press the mixture into the bottom of the prepared pan. Bake for 20 minutes or until lightly golden.

Remove from oven and let cool while preparing the caramel.

Make the Caramel Layer:

In a saucepan over medium heat, melt the butter and brown sugar until the sugar dissolves.

Add the sweetened condensed milk and golden syrup, stirring constantly.

Bring to a boil and continue to cook for 5-6 minutes until the mixture thickens.

Pour the caramel over the cooled shortbread base. Allow to cool and set.

Prepare the Chocolate Topping:

In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and melted.

Pour the melted chocolate over the set caramel layer, spreading evenly.

Add Garnish:

Sprinkle the chopped nuts over the chocolate while it’s still melted.

Allow the chocolate to set completely, either at room temperature or in the refrigerator.

Cut and Serve:

Once fully set, lift the dessert out of the pan using the edges of the parchment paper. Cut into squares or bars.
