Ingredients:

4 large russet potatoes

Vegetable or canola oil, for frying

Salt, to taste

Instructions:

Prepare the Potatoes:

Peel the potatoes and cut them into strips about 1/4 inch thick. To ensure they cook evenly, try to cut them into as uniform pieces as possible.

Soak the Potatoes:

Soak the potato strips in a bowl of cold water for at least 30 minutes or overnight. This step removes excess starch, which helps achieve crispiness.

Dry the Potatoes:

After soaking, drain the potatoes and pat them thoroughly dry with paper towels. Removing moisture is key to getting them crispy.

Heat the Oil:

Fill a large heavy-bottomed pot or deep fryer with about 3 inches of oil. Heat the oil to 300°F (150°C). Use a thermometer to check the temperature, as accurate heat is essential.

First Fry:

Fry the potatoes in batches, careful not to overcrowd the pot, for about 4-5 minutes per batch. They should be soft but not browned at this stage. Remove the fries with a slotted spoon and drain on paper towels.

Increase the Heat:

Increase the oil temperature to 400°F (200°C).

Second Fry:

Return the fries to the oil in batches and fry for another 3-5 minutes until they are golden and crispy. Again, do not overcrowd the pot.

Season:

Immediately season the fries with salt and any other seasonings you like as soon as they come out of the oil.

Serve:

Serve the fries hot for the best texture and flavor, alongside your favorite dipping sauces or as a side to burgers or sandwiches.
