Ingredients:

1 pound ground beef or ground lamb

1 onion, finely chopped

2 cloves garlic, minced

1 cup diced carrots

1/2 cup peas

1/2 cup corn kernels

1 teaspoon Worcestershire sauce

1 teaspoon dried thyme

Salt and pepper, to taste

1/2 cup beef broth

2 tablespoons all-purpose flour

2 cups mashed potatoes

1 cup shredded cheddar cheese

Instructions:

Prepare the Pie Crust:

In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water, stirring with a fork until dough forms a ball. Wrap in plastic and refrigerate while you prepare the filling.

Make the Meat Filling:

In a skillet, cook the ground meat over medium heat until browned. Drain excess fat.

Add onions and garlic to the skillet and cook until softened. Stir in carrots, peas, and corn and cook for a few more minutes.

Sprinkle flour over the meat mixture and stir to coat. Add beef broth, Worcestershire sauce, thyme, salt, and pepper. Simmer until the sauce thickens, about 10 minutes. Remove from heat.

Assemble the Pie:

Preheat your oven to 375°F (190°C).

Roll out two-thirds of the dough on a floured surface to fit a 9-inch pie plate. Transfer dough to pie plate, pressing into the bottom and up the sides.

Spread the meat mixture into the pie crust. Layer the mashed potatoes over the meat, smoothing the top.

Sprinkle shredded cheese over the potatoes.

Roll out the remaining dough and place it over the filling. Seal the edges and make slits in the top to allow steam to escape.

Bake:

Bake in the preheated oven for about 35-45 minutes, or until the crust is golden brown and the filling is bubbly.

Let the pie cool for a few minutes before slicing. Serve warm.
