Ingredients:

For the Cherry Filling:

4 cups fresh or frozen cherries, pitted

1 cup granulated sugar

1/4 cup water (omit if using canned cherries)

2 tablespoons cornstarch

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1/4 cup boiling water

Additional:

Sugar for sprinkling

Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Prepare the Cherry Filling:

In a saucepan over medium heat, combine cherries, sugar, and water (unless using canned cherries). Stir frequently until the mixture is heated through and begins to bubble.

Mix the cornstarch with a little cold water to make a slurry, then stir it into the cherry mixture.

Add vanilla and almond extracts, and continue to cook, stirring until the mixture thickens (about 2 minutes).

Pour the filling into a 9×9 inch baking dish.

Make the Cobbler Topping:

In a medium bowl, mix flour, sugar, baking powder, and salt.

Add cold cubed butter, and use a pastry cutter or your fingers to blend the butter into the flour mixture until it resembles coarse crumbs.

Stir in boiling water just until the mixture is evenly moist.

Assemble and Bake:

Drop spoonfuls of the topping mixture over the cherry filling. It doesn’t need to cover completely as it will spread during baking.

Sprinkle a bit of granulated sugar over the topping for extra crunch and sweetness.

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.

Serve:

Let the cobbler cool slightly before serving. It’s delicious on its own or topped with vanilla ice cream or whipped cream.
