Ingredients:

2 medium zucchinis

1 teaspoon salt

2 large eggs

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup finely chopped onion

1/2 teaspoon black pepper

Oil for frying (vegetable, canola, or olive oil)

Instructions:

Prepare the Zucchini:

Grate the zucchinis using the large holes of a box grater.

Place the grated zucchini in a colander, sprinkle with salt, and let it sit for 10 minutes. The salt helps draw out moisture.

After 10 minutes, squeeze out as much moisture as you can. This step is crucial for getting crispy fritters.

Make the Batter:

In a large bowl, beat the eggs.

Add the flour, baking powder, Parmesan, garlic, onion, and black pepper to the eggs and mix until combined.

Fold in the grated zucchini until everything is well incorporated.

Fry the Fritters:

Heat a few tablespoons of oil in a large skillet over medium-high heat.

Scoop heaping tablespoons of the zucchini mixture into the skillet, flattening them slightly with the back of the spoon to form fritters.
