Pickled Beets Recipe
Ingredients:
2 pounds fresh beets
1 cup water
1 cup white vinegar
1/2 cup sugar
1 teaspoon salt
1/2 teaspoon whole peppercorns
2 cloves garlic, peeled
Optional: 1/2 teaspoon whole cloves or 1 cinnamon stick for additional flavor
Instructions:
Prepare the Beets:
Wash the beets thoroughly and trim off the greens (save these for another use, like sautéing). Boil the beets in water until tender, about 45-60 minutes, depending on their size. Drain and let cool.
Once cool, peel the beets. The skins should slip off easily after boiling. Slice into 1/4-inch slices or wedges, depending on your preference.
Prepare the Pickling Solution:
In a saucepan, combine water, vinegar, sugar, salt, peppercorns, and garlic. If using, add cloves or a cinnamon stick. Bring to a boil, then reduce heat and simmer for 5 minutes to blend the flavors.
Pack the Beets:
Sterilize jars and lids by boiling them for about 10 minutes or using a dishwasher on a hot cycle.
Pack the sliced beets into the sterilized jars.
Add the Pickling Solution:
Pour the hot pickling solution over the beets in the jars, leaving about 1/2 inch of headspace at the top. Make sure the beets are completely covered with the liquid. If using spices, you can add one clove or a piece of cinnamon stick into each jar for extra flavor.
Seal and Process:
Wipe the rims of the jars with a clean cloth or paper towel. Place the lids on the jars and screw the bands on until fingertip tight.
To ensure they are shelf-stable, process the jars in a boiling water bath for 10 minutes. Remove from the water and let cool. Check the seals after 24 hours; the lids should not flex up and down when the center is pressed.
Store:
Store the pickled beets in a cool, dark place. They will be ready to eat after 24 hours, but the flavors will continue to develop over the next few weeks. Once opened, refrigerate and consume within a month.
