Nutty Baked Oatmeal Recipe
Ingredients:
2 cups rolled oats
1/2 cup chopped nuts (walnuts, pecans, or almonds recommended)
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups milk (dairy or non-dairy)
1/3 cup maple syrup or honey
1 large egg
3 tablespoons melted butter or coconut oil
2 teaspoons vanilla extract
Optional: 1/2 cup mixed dried fruits (like raisins or cranberries)
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish.
Mix Dry Ingredients:
In a large bowl, mix together the rolled oats, half of the chopped nuts, baking powder, cinnamon, and salt.
Whisk Wet Ingredients:
In another bowl, whisk together the milk, maple syrup or honey, egg, melted butter or oil, and vanilla extract.
Combine and Assemble:
Pour the wet ingredients into the dry ingredients and stir until combined.
If using, stir in the mixed dried fruits.
Pour the mixture into the prepared baking dish, and sprinkle the remaining chopped nuts over the top.
Bake:
Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the oatmeal has set.
