Millionaire’s Shortbread Recipe
Ingredients:
For the Shortbread:
2 cups all-purpose flour
1/2 cup white sugar
3/4 cup unsalted butter, softened
For the Caramel:
1 cup butter
1 cup light brown sugar
2 tablespoons light corn syrup
1 can (14 ounces) sweetened condensed milk
For the Chocolate Layer:
1 1/2 cups milk or dark chocolate chips
1 teaspoon vegetable oil (optional, for smoother chocolate)
Instructions:
Prepare the Shortbread Layer:
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour and sugar. Mix in the softened butter until the mixture is crumbly.
Press the dough into a 9×13 inch baking dish, ensuring it is even and smooth.
Bake for 20 minutes or until lightly golden. Remove from oven and allow to cool slightly.
Make the Caramel Layer:
In a saucepan over medium heat, combine butter, brown sugar, corn syrup, and sweetened condensed milk.
Bring to a boil, stirring constantly. Continue to boil for about 5 minutes or until the mixture becomes thick and amber in color. Watch carefully to avoid burning.
Pour the caramel over the baked shortbread. Allow to set until firm, about 2 hours.
Add the Chocolate Layer:
Melt the chocolate chips in a microwave or double boiler. Stir in vegetable oil if using.
Pour the melted chocolate over the caramel layer and spread evenly with a spatula.
Allow the chocolate to set at room temperature or in the refrigerator.
Cut and Serve:
Once fully set, cut into squares or circles using a sharp knife or cookie cutter.
Serve at room temperature for best flavor.
